- 1 cup Milk
- 2 tablespoons Unsalted Butter
- 3/4 cups Quick Cooking Oatmeal
- 1/3 cup Cream Cheese
- 1/4 teaspoon Salt
- 1/2 cup Brown Sugar
- 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
- 3 Egss (Seperated)
- 1/2 cup Chopped Walnuts
- 1/2 cup Raisins, Dried Cranberries, ......
||Preheat Oven to 350° |
||Butter and Sugar a 1 1/2 quart Souffle' Dish |
||Combine the Butter and Milk in a small Sauce Pan and heat to barely boiling. |
||Slowly add the Oatmeal, stirring constantly. Cook until thick. |
||Remove from heat and add the Cream Cheese, Salt, Brown Sugar, Nutmeg, and Cinnamon. Stir brisklyto blend and smooth the mixture. |
||Beat the Egg Yolks slightly and slowly ad to the Oatmeal Mixture, stirring constantly. |
||Stir in the Raisins and Walnuts. |
||In a separate bowl beat the Egg Whites until they are stiff but still moist. Gently fold the Egg Whites into the Oatmeal Mixture (fold only until no large lumps of whites remain). |
||Spoon the mixture into the prepared Souffle' Dish. Bake 35 - 40 minutes, or until the center still trembles a bit, but most of the Souffle' is set. |
||Serve Warm with Cream or Milk. |
This soufflé can be prepared the night before and reheated in the morning.
You can use raisins, dried cranberries, or any other dried fruit.
