Aunt Alyce’s Fluffy Birthday Sponge Cake

This recipe came to me through my barber, Lady Jane.  When she was growing up her Aunt Alyce would bake this cake for all birthdays giving the recipient a choice of filling (lemon, strawberry,  banana, etc.).  It is a very light sponge cake that makes a perfect vehicle for any filling you may desire.

A very light sponge cake that makes a perfect vehicle for any filling you may desire.

Ingredients

  • 6 Eggs (Seperated)
  • 1 1/2 cup Sugar
  • 6 tablespoons Warm Water
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cup Cake Flour
  • 1/4 teaspoon Salt
  • 1 1/2 teaspoon Baking Powder

Directions

1. Preheat oven to 325F.
2. Beat the Egg Yolks until thick and Lemon Colored.
3. 3. Reserve 1/3 cup of sugar. Gradually add the remaining Sugar and 2 Tablespoons of Water to the Egg Yolks and beat until blended.
4. Beat in the Flour alternately with the rest of the Water and the Vanilla.
5. Beat the Egg Whites until frothy. Add the reserved Sugar, Baking Powder, and Salt. Continue beating until it holds soft peaks.
6. 6. Gently fold the Egg Whites into the Egg Yolk mixture.
7. 7. Turn the mixture into a 9” Ungreased Tube Pan. Bake for 45 – 60 minutes until a toothpick comes out clean.
8. 8. Cool cake, unmold and split into 3 layers. Fillings can include Lemon, Bavarian Cream Bananas, Strawberries, … This cake is divine with a Whipped Cream frosting (1 pint Heavy Cream whipped stiff).
