Pumpkin Squares

Another great recipe from Mrs. Evelyn Dance.  She always used to say the only reason to have a meal is to get to dessert.

  • 1 box Yellow Cake Mix
  • 4 Eggs
  • 1/2 cup Butter (Melted)
  • 1 can Pumpkin Pure' (Large (29oz.))
  • 3 teaspoons Cinnamon
  • 1/2 cup Brown Sugar
  • 2/3 cups Evaporated Milk
  • 1/2 cup Butter (Softened)
  • 1/2 cup Sugar
  • 1/2 cup Chopped Nuts


1. Preheat oven to 350
2. Reserve 1 cup of the Cake Mix
3. Beat one egg and mix with the melted butter and the remaining cake mix. Press an ungreased 9x13 pan. Bake for approximately 15 minutes or until golden.
4. In a mixer combine the three remaining eggs, pumpkin, cinnamon, brown sugar, and evaporated milk. Mix until well blended.
5. Pour this mixture over the prepared crust.
6. Combine the reserved cake mix, softened butter, sugar, and nuts. Mix until crumbly. Sprinkle over the top of the pumpkin mixture.
7. Bake for 1 hour
8. Let cool, cut into 18 squares.
