Veal Marsala

Serves 4

  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Unsalted Butter
  • 1lb Veal Cutlet (Pounded Thin)
  • Flour (Spread on a plate)
  • salt (To taste)
  • Black Pepper (To taste)
  • 3/4 cups Sweet Marsala
  • 1/3 cup Heavy Cream
  • 1 4 oz. Can Cliced Mushrooms
  • 1 tablespoon Lemon Juice


1. Prepare the Veal by pounding it thin.
2. Put the Oil and Butter in a on Medium Heat
3. Dredge both sides of the Veal in the Flour and brown them quickly in the pan. Do not overlap the pieces of meat. Do it in several batches if necessary. When browned move to a platter and keep wrm
4. When all the meat is browned, turn the heat up to high, add the Marcela and deglaze the pan.
5. Add the Lemon Juice and Mushrooms. Cook until the sauce thickens.
6. Turn the heat to medium and add the Heavy Cream. Cook stirring until the cream is blended in.
7. Add the meat to the sauce, cook for a minute and serve
